Detr\u00e1s de cada botella hay un paisaje, un clima, una cosecha y una forma de hacer que se ha transmitido de generaci\u00f3n en generaci\u00f3n.<\/p>\n\n<p><br\/>La cata comienza mucho antes de probarlo. La vista nos da las primeras pistas: los tonos verdes o dorados revelan el momento de maduraci\u00f3n de la aceituna y su variedad. Despu\u00e9s llega el aroma, una explosi\u00f3n de notas vegetales que pueden recordar a la hierba reci\u00e9n cortada, la alcachofa o la almendra verde. Es el momento de inspirar profundamente y dejarse llevar por su frescura.<\/p>\n\n<p>En la boca, el aceite revela toda su complejidad. Primero, la suavidad y la textura; despu\u00e9s, el gusto afrutado que puede ser m\u00e1s dulce o m\u00e1s intenso seg\u00fan la variedad. Y finalmente, ese toque ligeramente amargo o picante que indica la presencia de antioxidantes naturales y que es se\u00f1al de un aceite de alta calidad.<\/p>\n\n<p>Un buen aceite virgen extra es, a la vez, equilibrio y car\u00e1cter. No solo acompa\u00f1a los platos, sino que los transforma: una rebanada de pan tostado, una ensalada fresca o un pescado a la plancha se convierten en una experiencia sensorial.<\/p>\n\n<p>Por eso, catar un aceite es tambi\u00e9n comprender su alma.
